Any of a group of polysaccharides that are composed of fructose residues and occur widely in plants, esp. as reserve foods; a fructosan.
1953Whistler & Smart Polysaccharide Chem. i. 17 The polysaccharides termed fructosans in the literature are hence incorrectly named. The preferred name fructans is employed in this book.1957Whistler & Corbett in W. Pigman Carbohydrates xii. 683 Dahlia tubers and the tubers of the Jerusalem artichoke are rich in fructans.1964D. D. Davies et al. Plant Biochem. iii. 145 Most fructans also contain very small amounts of glucose.
