A chemical ferment, obtained as a white powder from yeast desiccated in air; it is the constituent which produces the inversion of sugar.

VIII. 784 Invertin—Donath..obtains this substance by treating yeast according to Zulkowsky and König's method..It is obtained in the form of a powder, a very small quantity of which is sufficient to bring about the inversion of cane-sugar.1896Allbutt's Syst.
